Game Day [Tailgate Snacks]

Whatever strikes your fancy—when it comes to game day there are plenty of food ideas to create, and nothing beats a simple classic. This time, I decided to make a bold version of ‘pigs in a blanket’. It’s a different version, filled with flavour and a slightly spicy cheesy sauce to get the conversation started.

It’s easy to add in a dollop or three to your meals, which gives any side dish or meal a great punch of heat and tanginess.

Spicy Sausage & Mustard BBQ Rolls

Ingredients: 

1 crescent roll dough can (340g)  

340g smoked beef bratwursts or smoked turkey sausage links 

1 – 2 teaspoons vegetable oil or corn oil 

½ tablespoons quality butter 

50(½ cup) sharp cheddar cheese, shredded  

½ teaspoons ‘Everything’ seasoning, for garnishing 

Mustard Sauce: 

5 tablespoons Colman’s Dry Mustard Powder 

1/8 teaspoon cayenne pepper   

1 teaspoon Worcestershire sauce 

1 teaspoon ground garlic 

3 tablespoons apple cider vinegar 

2 tablespoons raw organic honey 

3 teaspoons ketchup 

tablespoons light brown sugar 

1 teaspoon chilli powder  

1 teaspoon smoked paprika 

teaspoons chilled water  

pinch freshly cracked black pepper   

Bake: 12-15 minutes at: 180C/350 F/Gas Mark #4 

Yield: 8 medium rolls

Method: 

  1. 1. In a small bowl, add in all of the mustard sauce ingredients, except the brown sugar. Whisk vigorously for 60 seconds. Tip in the brown sugar, whisking until well combined. Set the bowl aside and cover with cling film. Let the sauce rest at room temperature or in the refrigerator for 15-20 minutes. 

  1. Cut the beef sausage in 8-10 small links (approx. 7cm or 2”-3” In length).  

  1. 2. Add in the vegetable oil to a medium non-stick saucepan to medium heat. Add the sausage links and cook for 4-5 minutes until slightly charred. 

  1. 3. Remove the sausages from the heat and set aside. 

  1. 4. Roll out the pre-cut triangles of dough flat on a baking tray. Add a good spoonful of shredded cheddar cheese along the middle of each piece of dough, starting from the wider end of the triangle. 

  1. 5. Add 1 teaspoon of mustard sauce on top of the cheese per piece of triangle.  

  1. 6. Place one sausage link on each triangle, horizontally, close to the widest end of the dough. 

  1. 7. Roll up the triangles, starting at the wide end. Place on the baking tray; curving each piece into the crescent shape (like a croissant). Brush the tops with melted butter. Generously sprinkle with ‘Everything’ seasoning.  

  1. 8. Bake for 12-15 minutes, until deep golden brown. Serve with mustard BBQ sauce.
