Try this recipe for a side or a great snack for the entire family. This baked cheese recipe is an easy way to bake brie and is especially good for entertaining. I love to use pecans because they have a buttery nuttiness but feel free to use almonds or even macadamia nuts. I hope you enjoy it!

Description

This recipe uses the Emile Henry (small baking vessel) for baked brie with savoury and sweet elements. 

Ingredients
  • 1 6-8 Oz. (170g-226g) wheel of brie
  • 1/2 cup (120g) cranberries (or sour cherries)
  • 1/4 cup (60g) pecan halves, (more to taste)
  • 1 spring, fresh rosemary
  • 1 teaspoon honey
  • 1/8 teaspoon (pinch) salt
  • 1 toasted baguette, wafers, or crackers (to serve)
Method:
  1. I used the Emile Henry Cheese Baker, which you can read more about in the featured post here, and how versatile it is for your needs. 

    1. Preheat the oven to 350°F/ 180°C. 
    2. If you are using a cheese baker skip to step 3, otherwise line a baking tray with greaseproof paper or baking parchment.  
    3. Place brie in the cheese baker or on the lined baking tray. Using a knife, lightly score the top of the brie in a crisscross pattern (carefully do this two times), making sure to get the circumference of the brie (this will help with presentation, and make it easier to eat when the cheese oozes out).  
    4. Place the cranberries in the centre of the brie, then add pecan halves on top or around the cranberries. Remove rosemary leaves from the stem and break up some of the leaves in the palm of your hand, then sprinkle the rosemary over the brie. 
    5. Drizzle 1 teaspoon of honey over the top.  
    6. Place the brie in the oven. Bake for 10-12 minutes. Remove from the oven and sprinkle a pinch of flaked salt on top. Garnish with any leftover fresh rosemary leaves. 
    7. Serve with baguette slices, crackers or savoury wafers.
