As we prepare to head into the end of summer, there's still plenty of time to enjoy seasonal favourites like tropical fruit. Summer calls for a drink that feels both refreshing and restorative.
I've made this Matcha, Moringa, and Pineapple Cooler that combines the vibrant, grassy notes of ceremonial matcha with the nourishing goodness of moringa — the addition of pineapple is bright and sweetens it naturally.
This is a simple beverage to make, and you can opt to create it in a blender or in stages using a cocktail muddler, mixing bowl, and strainer.
It's a beautiful and tasty tropical drink that feels like a little summer ritual in a glass—full of energy, antioxidants, and made for slow afternoons on the patio, garden gatherings, or a moment of calm between the busyness of the day.
I like to serve this in a chilled glass, over ice and garnished with fresh mint, pineapple, and a delicate candied butterfly, but you can opt the latter. It's merely added for dramatic effect.
Pineapple cools you down and quenches your thirst for a refreshing concoction. Think, dining alfresco at home (my favourite during this season), at a summer brunch table, or on an afternoon enjoy this as a pick-me-up when it's sunny and warm.



Matcha is a finely ground green tea powder traditionally used in Japanese tea ceremonies. I like using this matcha (ceremonial grade) because of the quality, you don't need as much unless you prefer it. It offers a smooth, earthy flavour and is prized for its antioxidant content and gentle energy.
